Enrico Serafino fulfilled his dream of becoming a wine producer in 1878, when he moved to Canale in the heart of the best Piedmontese wine production area. With an act of strong will, despite having no connection with the world of wine, he began the production of Barolo Barbaresco and Metodo Classico. In 1882 the idea of ​​moving to Canale was confirmed as an excellent choice, thanks to the opening of a railway link between Turin and Genoa, which created a real advantage in the transport of wines. In 1897 Enrico Serafino began shipping wines abroad starting from Europe and heading towards the Americas. On March 22, 1918, Enrico Serafino died, now recognized as a true patriarch of Italian wine. from here his sons take over the leadership of the renowned winery. in 1928 thanks to the constant commitment of the Luigi Enrico winery, son of the founder, he received an award in the `` Knight's Cross of the Order of San Silvestro '' conferred by S.S. Pope Pius XI. In 1994 Enrico Serafino joined the '' Consortium of the Classic Method Sparkling Wine - Alta Langa Project ''. In the autumn of this year, the first 20 hectares of experimental vineyards go into production, giving rise to the first harvest in the history of the appellation.

OUDEIS comes from the Greek “Odysseus” and means nobody. In fact, no one is at the origin of the complexity of the wine; only the terroir has this paternity. Enrico Serafino wants to remember him starting with the name of his classic method. This wine is the result of the complexity of the Alta Langa terroir and the long fermentation, while the short maceration gives it a pleasant pink color. 2017 will be remembered for the frosts in April and the subsequent very hot and dry weather. Therefore, the conditions were perfect in terms of plant development and protection. In September, temperatures dropped significantly with notable differences between day and night temperatures. This situation was particularly positive for the polyphenolic profile of red wine grapes with a medium-long vegetative cycle. 2017 can certainly be remembered as an early vintage with healthy and complex grapes. The bunches are selected by hand on the vibrating table and cooled with carbonic snow. After destemming and crushing, the must is left to rest for 2-4 hours in an inert environment (nitrogen). At the end of the short maceration for the extraction of the color (saignée) the soft pressing takes place. The entire process takes place without the use of augers in order to treat the grapes in the most delicate way possible. Finally, the must is fermented in stainless steel tanks at a controlled temperature and stored for 6 months on the lees with bâtonnage. Classic method: The second fermentation is carried out according to the traditional method of fermentation in the bottle, with aging on the lees for at least 36 months. The liqueur d'expédition added after disgorgement is prepared following our secret recipe which includes reserve wines and sugar (7 g / L). We pride ourselves on avoiding any spirits in our final dosage.
