Enrico Serafino fulfilled his dream of becoming a wine producer in 1878, when he moved to Canale in the heart of the best Piedmontese wine production area. With an act of strong will, despite having no connection with the world of wine, he began the production of Barolo Barbaresco and Metodo Classico. In 1882 the idea of ​​moving to Canale was confirmed as an excellent choice, thanks to the opening of a railway link between Turin and Genoa, which created a real advantage in the transport of wines. In 1897 Enrico Serafino began shipping wines abroad starting from Europe and heading towards the Americas. On March 22, 1918, Enrico Serafino died, now recognized as a true patriarch of Italian wine. from here his sons take over the leadership of the renowned winery. in 1928 thanks to the constant commitment of the Luigi Enrico winery, son of the founder, he received an award in the `` Knight's Cross of the Order of San Silvestro '' conferred by S.S. Pope Pius XI. In 1994 Enrico Serafino joined the '' Consortium of the Classic Method Sparkling Wine - Alta Langa Project ''. In the autumn of this year, the first 20 hectares of experimental vineyards go into production, giving rise to the first harvest in the history of the appellation.

Parcellaire Enrico Serafino is a classic Alta Langa method produced mainly from Pinot Noir grapes produced from single parcels particularly representative of the denomination facing West, North West aged between 15 and 25 years at an altitude between 400 and 450 slm on a clayey-limestone soil. The harvest takes place exclusively by hand and after the manual selection of the bunches the grapes are pressed in an inert environment. The must ferments in stainless steel tanks at a controlled temperature and stored on the lees for six months with continuous "batonnage". The permanence on the lees is about 36 months on the lees and after disgorgement the distillates are not added to the "liqueur d'expedition" but the ingredients of the original recipe of the House.

Parcellaire Enrico Serafino has a straw yellow color with golden reflections and a fine and persistent perlage. Complex and intriguing nose with floral hints, bread crust and mineral hints. Vertical on the palate, as expected from a great pinot noir, excellent acidity and good minerality which makes the drink vibrant.
