Sant'Eufemia is a farm located in the territory of Cisterna di Latina, between the areas of Doganella di Ninfa, Colle della Villa and Valle Abate, on the border with Lanuvio and Velletri. A wonderful landscape where organic farming is practiced with passion and dedication in the cultivation of olives, kiwis and grapes. Among the cultivated varieties we find Bellone, Grechetto, Merlot, Malvasia Puntinata, Vermentino, Syrah, Cabernet franc and Cabernet Sauvignon used to produce very good wines.

The organic wine Mood by Sant'Eufemia is produced with Vermentino grapes harvested by hand in the first week of September and sent for direct pressing. Then  winemaking process proceed with the static decantation and tapping of the clear must after 12 hours at 10 ° C, and the addition of selected yeasts for alcoholic fermentation at a controlled temperature for about 15 days. The wine then ages on the fine lees stirred day by day for a few weeks, before being bottled in the first months of the year following the harvest.
