The Pancarpo of the Giangirolami winery is an organic red wine that interprets with character and personality the classic Bordeaux vines blend, in this case Cabernet Sauvignon, Petit Verdot, Syrah and Merlot. Ruby red color and fragrant bouquet of wild berries, combined with a soft and fresh taste that is easy to drink.
Donato Giangirolami's winery was founded by his father Dante who in 1956 bought vineyards between Aprilia and Velletri where he could grow Bellone and Moscato di Terracina, in an area that was then virgin. The initial activity was essentially based on the sale of grapes to large wine producers. It was Donato who in the 90s, after having become passionate about the vineyard since his youth, decided to expand the company by purchasing land in Ninfa, Doganella and Borgo Montello and starting a long and careful process of transformation from traditional to organic agriculture, among the first in the province of Latina. In 2003 the certified organic company Donato Giangirolami was born, and today the daughters Federica and Laura continue in the family tradition to the third generation. 80 hectares of which 38 are vineyards and the rest in Kiwi, in a large area that extends from the Castelli Romani to the Province of Latina and Cori, where the use of technology is at the service of research of the highest quality.
Pancarpo was born from the idea of Donato Giangirolami to produce a wine inspired by the Bordeaux blends but respectful of the territory of origin, and faithful to the typical immediate expressiveness of Lazio wines. The vineyards are located in Le Ferriere in the province of Latina, in the area where the city of Satricum once stood, on soils composed mainly of sands and clays. The grapes are vinified through an alcoholic fermentation in steel and submerged cap maceration, to preserve the integrity of the fruit and the freshness of the vine as much as possible, then the wine ages in steel for another 12 months. The result is a wine that can be drunk pleasantly, with aromas of wild berries and wild herbs, where the fruity elegance of Cabernet Sauvignon, the softness of Merlot and the strong spiciness of Petit Verdot stand out.
