For more than sixty years the Donato Giangirolami farm has nourished the earth in compliance with European organic legislation, to let the most intense and genuine emotions blossom from a glass of wine, because "wine must be a pure experience, lived in respect of health and the environment ". Founded by his father Dante in 1956, it has been consolidated over time and transformed into its current state by his son Donato. Organic since 1993, Dante wanted the quality product to be first and foremost healthy, as well as good. Since 2003 Donato, who has become the direct producer of the company, has continued the family tradition, in the locality of Le Ferriere, in Borgo Montello, in a Lazio IGP land that extends for 38 hectares, with 4000 native plants per hectare, using the farming system espalier with Guyot pruning, without the aid of synthetic chemicals, both for treatments and for fertilization, and working with cutting-edge technological equipment, which allows to preserve the wine from external agents and to fully respect the its naturalness. With stainless steel tanks with heat exchanger for temperature control, and vinifiers, also in stainless steel, which use the submerged cap method, the press gently extracts the must and the wine, working softly under vacuum, obtaining the best must, and with the help of nitrogen, allowing the marc to never be in contact with the air, avoiding oxidation and drastically reducing antioxidant substances.

The Prodigal Donato Giangirolami is a soft, generous and intense interpretation of Lazio. Harvested from a clayey and sandy soil with a Guyot training system, it is harvested at the end of September, and vinified with a submerged cap in steel. Finally it is aged, both in steel and in 10-hectolitre barrels, for 12 months.

The Prodigo Donato Giangirolami is a red with a deep and intense ruby ​​color, with purple hues. On the nose there are fruity tones of cherry and small red fruits, plum and dried roses and black pepper and incense, it is rich and deep, with a layered bouquet, with slightly pungent hints of aromatic herbs. On the palate it is soft, warm and concentrated, full-bodied and with a freshness in balance with the alcohol content, moderately structured with fresh and balsamic aromas.
