Novello Capriccio d'autunno Novello

Award-winning, this Novello, 100% Merlot grapes, is the flagship of the company. A manual collection, a slow maceration of carbon, a soft pressing for a soft, deeply harmonious taste of raspberry notes.

The grapes harvested are gently diraspated and placed in special thermocontrolled tanks where a slow maceration of carbon begins for 10 days. After this stage, the grains still intact and rich in flavors and fruity fragrances are pressed hard and the must slowly ends in fermentation. The wine is then poured and left to rest in small steel tanks at low temperature for several days without initiating the fermentation of the malolacticum, in order to maintain the characters and the younger. It is then bottled and left to refine in bottle before being marketed.

Ruby red with purple reflections. Intense and fruity scents, where raspberries, purple and black smells emerge. Taste pleasantly dry, good texture, fresh and intensely fruity.
