The Olivella was founded in 1986, thanks to the inspiration of an expert Puglia winemaker, Mr. Umberto Notarnicola, and a scrupulous Piedmontese wine expert, Mr Bruno Violo, entrances in love with the landscape of Lazio. It is a young and dynamic farm that is constantly innovating, though maintaining strong ties with local culture and traditions. The hills where the vineyards of Frascati grow, are of volcanic origin, rich in mineral salts (potassium, phosphorus, calcium and magnesium) and poor in nitrogen.
The ideal mix for vine cultivation and the production of high quality organoleptic wines. Olivella is located between Monteporzio and Frascati, on the hills around Rome, a few kilometers south along the Tuscolana street. It is easily reachable from the Roma-Napoli motorway, exit at Monteporzio Catone junction. Frascati has always been the wine of Rome, boasting the longest historical tradition: the ancient Romans appreciated the Tuscolo wine, hill above Frascati, a natural terrace overlooking the capital.

Volcanic soil rich in Potassium, Phosphorus and Magnesium. Well-ventilated and ventilated hills. The vineyards are bred at Guyot with a density of 4,500 logs per hectare which give a production of about 80 ql / ha. Harvesting takes place manually, attaining the right maturation, a careful selection of grapes is made.

It has ruby ​​red color with garnet reflections. Ethereal smell, with vanilla scents, intense and elegant. Dry, warm and persistent taste.
