In Vallagarina, in Trentino, Vallarom is a family-run winery for experimenters, which has a noble philosophy in mind, to take a step back and return to a type of viticulture that is friendlier to the environment and free from chemical pesticides, to give a "real" product, truly a "child" of the environment, the territory and the seasons. "I will never say that my wines do not contain sulfur dioxide, since it develops naturally during fermentation; but I can say that I always add the bare minimum only if necessary. The world is polluted everywhere and I believe that we should all work hard. to change it, without reaching useless and maddening conclusions ". Since 1999 they have abolished the use of chemical pesticides and since 2004 they use only copper and sulfur for phytosanitary defense, to try to understand what is best for the soil, based on the climate and plants, looking for the best way. Today they only use organic products, solar panels and recycled paper labels to better protect their natural product. With an extraordinary 7-hectare vineyard, the right microclimate and a BioVegan certification, Vallarom produces one of the best expressions of Trentino Pinot Nero, with personality and character, balanced and natural but at the same time full-bodied, fragrant and long-lasting.

Vò Millesimato Vallarom is an organic classic method sparkling wine with a close link with its terroir. The grapes are harvested by hand using the simple Trentino pergola method from vines planted in '85 on a limestone-dolomitic soil of 4500 vines per hectare. It is vinified in white in steel at a controlled temperature and for a 20% fermented in barriques by indigenous yeasts, to be then stored in stainless steel and for 20% in barriques for six months with weekly batonnage. Finally it is refermented in the bottle and left on the lees for 30 months. Disgorgement without dosage.

Vò Millesimato Vallarom is a straightforward wine, full-bodied and elegant. On the nose aromas of custard and intense notes of honey, green apple and bread crust. On the palate a fresh, savory, persistent taste and an intense, complex flavor with a pleasantly mineral finish.
