Demetra Pinot Nero

The Demetra Brut Nature Millesimato Mirabella Franciacorta does not hold back from anything or anyone. The bunches were harvested only from vineyards over 18 years old, to highlight their quality. The various grapes separated during the winemaking phase in perfect ripeness, fermented with selected yeasts in concrete tanks of which 25% of the Chardonnay fermented in barrique and batonnage for 4-5 months, and then finally refined on the yeasts for a minimum of 55 months and no less than 6 before sale after disgorgement.

The Demetra Pinot Nero Mirabella Franciacorta is produced with 100% Pinto Nero grapes, in the Franciacorta area. During the manufacturing process the pressing is soft. The first fermentation takes place with selected yeast at a temperature of 16-18 degrees in concrete tanks. Bottle refinement on yeasts for 24 months.
