The winery was founded back in 1793 when Agostino Uberti became the owner of a small farmhouse and surrounding vineyards, in the Salem area of ​​Erbusco. The production of wine began immediately, but the great leap towards excellence began in the seventies when G. Uberti together with his wife Eleonora took the reins of the company projecting it into the vision of quality, respect for tradition and the environment that has made one of the most representative of Franciacorta.

Made with carefully selected Chardonnay grapes and light pressing. The fermentation of the must takes place totally in the truncated conical vats of natural oak from 32 Hl, free from transfers of spicy notes and toasting. Only after a long period of minimum 60-72 months in contact with its own yeasts is it offered in the only "Dosaggio Zero" type and marketed after at least 6 months after disgorgement.

Straw yellow in color with green nuances and abundant and creamy froth with thin and persistent Perlage. The nose has an intense aroma, almost imperceptible, the effluvi due to wood.
The taste shows pleasant evolutionary notes, surprising the particular softness and roundness,
certainly not due to the presence of sugars.
