Nèprica Negroamaro

The great tradition of the Antinori family from Tuscany arrives in Puglia at the end of the 1990s in that territory of the Murgia and the northern Salento where wine has been produced since Roman times, took over the Tormaresca winery and founded the new winery of Masseria Maime, conceived according to the most modern theories on the vinification of Renzo Cotarella. In this wonderful context made of fields and olive trees, where the largest quantities of wine grapes have always been produced since ancient times, it started an hard work of valorisation of native vines such as Primitivo, Negroamaro and Aglianico begins, guided by the rediscovery of the "terroir" kept for centuries.

Nèprica is obtained with Negroamaro grapes vinified in purity in stainless steel tanks at controlled temperature. Maceration takes place without ever exceeding 26 ° C and lasts 8-10 days, while the malolactic fermentation ends by the beginning of the winter season. Maturation takes place subsequently in steel for about 8 months and in bottle for another 4 months. A versatile wine that expresses the scents of Puiglia, ideal with cold cuts, game and aged cheeses.
