Primitivo Riserva is the organic wine of the Fatalone company that undergoes a long aging process. It has a ruby red color with garnet reflections, and a bouquet of ripe fruit with spicy and toasted aromas. On the palate it is balanced, fresh and mineral, with hints of plum, black cherry and notes of blackberries and mulberry. The final almond aftertaste characterizes it strongly.
The history of the Fatalone winery dates back to the end of the 19th century when Nicola Petrera decided to grow Prmitivo grapes in the Gaudella district of Gioia del Colle on the sunny hill of Spinomarino, in the Murgia in Puglia. The love for the vineyard has since been handed down from generation to generation, and in 1987 Filippo Petrera (fourth generation) bottles the first Primitivo DOC Gioia del Colle. The philosophy of the company follows the dictates of organic agriculture, naturally present in the genetic code of the family, which has always been attentive to the environmental sustainability of its products. Since 1987 there have been other labels and numerous certifications that today make it a zero km organic company, with zero environmental impact and zero CO2 emissions, ready to conquer the world.
The Primitivo Gioia del Colle DOC by the Fatalone winery is an organic wine that scrupulously follows the protocol for organic wines. The fermentation is spontaneous with maceration in steel at a controlled temperature with only indigenous yeasts, and natural malolactic. It does not undergo clarification, stabilization and filtration.
It ages for 12 months in steel, 12 months in 750-liter Slavonian oak barrels with the application of music therapy to refine the wine, and a further 12 months in the bottle. An ideal wine with both meat dishes, grilled fish and aged cheeses, testifying to the ancient proximity to the sea of the land on which the vineyards stand. As a good Riserva, it goes perfectly with chocolate desserts with 65% cocoa.
