Il Segreto di Cascina Ebreo embodies the philosophy of the company, which seeks the authentic expression of the terroir and the minimum interference in natural processes. It is a wine that invites reflection and discovery, a "secret" to be revealed sip after sip. It is a wine of relationship, born from the complicity between nature and the glass, between the vineyard and those who taste it.

Peter Weimer, known as Pete, is a former Swiss computer scientist, in love with the Langhe and "personality" wine: at the end of the 90s he decided to change his life, and with his wife he took over a farmhouse in the municipality of Novello, in a completely abandoned state. Peter is the son of farmers, and, together with his wife, with tenacity and patience he decided to recover the farmhouse and the surrounding vineyards, sensing their great potential: Cascina Ebreo, this is the name of the estate, is in fact located in the famous Barolo DOCG area, to be precise where the Ravera cru is produced. But Weimer chooses a different, unconventional path, and decides to produce wines outside of any scheme and denomination: his goal is to let the territory and the vineyard express themselves, without constraints and restrictions. He loves extreme wines, "for wine extremists". So he chooses to grow Barbera, Nebbiolo and Sauvignon Blanc, in a few hectares of land on the Novello hill, with a soil characterized by calcareous-clayey marl, with an eastern exposure, reducing interventions in the vineyard to a minimum, using natural processes and no particularly invasive treatments in the cellar. Among the products of Cascina Ebreo we remember the Barbera, Segreto, full-bodied and balsamic, the Nebbiolo Torbido!, obtained from the Michet variety, with a particular aromatic potential, the Sauvignon Blanc Sinchè, which can age in wood for 9 years and Rosso, based on Dolcetto, fruity and drinkable. What tells and expresses itself in these wines are exclusively the grapes and the terroir, in the name of craftsmanship and character, unique and inimitable.
Segreto is generally a wine obtained from red grapes, with a predominance of Barbera, as suggested by some descriptions that identify it almost as an archetype of this vine. Cascina Ebreo owns vineyards located in privileged positions, including the renowned Ravera cru, known for producing high-quality Barolo. The vines are cultivated following organic and biodynamic principles, with the exclusive use of organic fertilizers and particular attention to biodiversity. The vinification of Segreto is characterized by an artisanal and minimally interventionist approach. The pressing and fermentation take place in steel with a maceration on the skins that lasts for about 25-30 days, in order to extract color, aromas and tannins. The use of only indigenous yeasts favors the development of a complex and authentic aromatic profile. A distinctive aspect is the absence of filtration before bottling, a practice that preserves the richness and complexity of the wine. The refinement of Segreto is a long and patient process. The wine ages in oak barrels for a period that varies between 26 and 30 months, during which it acquires structure, complexity and finesse. After bottling, the wine rests in the bottle for at least two years before being released for sale, to allow for further refinement and harmonization of its components.
Intense ruby red color, with reflections that may vary depending on the vintage. Complex and layered bouquet, with notes of ripe red fruit, spices, balsamic hints and tertiary nuances that develop with refinement. On the palate it is a wine of great structure and personality, with present but well-integrated tannins, good acidity that gives freshness and a long and persistent finish. It is described as fascinating, severe, deep, complex and emotional. Given its structure and complexity, Segreto pairs well with rich and tasty dishes, such as braised meats, roast red meat, game and mature cheeses.
