Casale del Giglio's Cabernet Sauvignon is a wine produced with only Cabernet Sauvignon grapes. It presents to the eye with an intense and deep ruby ​​red color, with a bouquet including raspberry, black cherry, cassis, and hints of juniper, musk and undergrowth. On the palate it expresses its elegance, soft and rich at the same time, with a persistent and complex finish.

The history of the Casale del Giglio winery has been linked since its origins in the early 1900s to the Santarelli family, into to the world of wine in that of Amatrice. It was Dino Santarelli in 1967 who created Casale del Giglio on an estate in Le Ferriere ad Aprilia in the province of Latina, in a virgin area for viticulture near the ancient city of Satricum. In the 90s, thanks to the innovative vision of his son Antonio, in the wake of his paternal intuition, together with the young Trentino winemaker Paolo Tiefenthaler, he started a forward-looking research and experimentation project on about 60 vines, which brought Casale del Giglio first to the conquest of the local regional market up to a vast national and international development. Today it counts bottles with numerous awards that testify to the incredible creative and entrepreneurial momentum of two visionaries.

The Cabernet Sauvignon of Casale del Giglio is produced from the famous Bordeaux grape variety which, while maintaining the typicality of the terroir of origin, is able to express the peculiarities of the land on which it's planted. The red vinification takes place with punching down during maceration in order to extract both color and polyphenolic substances. Once the tumultuous fermentation is over, the wine continues to remain in contact with the skins for several days to extract until the last tannin thanks to the alcoholic reaction. Subsequently the malolactic fermentation takes place in steel, while the aging in oak barrels for 18/20 months followed by aging in the bottle for another 8/12 months. The result of this careful process is a pleasant and well-structured wine, especially if accompanied with medium-aged cheeses.
