The Gewürztraminer Vigna “Kastelaz” produced by Elena Walch's winery uses only natural Gewürztraminer grapes, the vineyards are located on soils composed of layers of light calcareous soil, with veins of sand and rocky layers of granite and porphyry, at a height of approximately 380 meters above sea level. The vinification takes place with a soft pressing of the grains, then the must is decanted in a static way, by lowering the temperatures, the vinification of the Gewürztraminer Vigna “Kastelaz” ends with the fermentation in steel at a controlled temperature of 18°C , finally the process ends with refinement on its own yeasts.
