The Capovilla distillery was founded in Rosà in the province of Vicenza by Vittorio Capovilla in the 1970s, who as a technician and mechanic of oenology tools first, decided to become an entrepreneur in the distillation sector. After learning the secrets of distillation in Germany, Vittorio Capovilla's company produces distillates from organic farming, from fruit that is spontaneous and always cultivated with maximum respect for the environment.

This grappa is produced from the pomace of Timorasso, a white grape variety that has been brought to light by the visionary genius Walter Massa, on the hills of Tortona in southeastern Piedmont.
