Not allestates can boast a long winemaking history like that of Novacella Abbey, where the Augustinian order has been producing wine since 1142! Centuries-old experience, combined with modern technologies and the great passion of those who collaborate in the vineyard and cellar, leads to the creation of wines with great personality capable of expressing all the potential of this border terroir. The Novacella Abbey is located in the northernmost wine-growing area of ​​Italy, in Alto Adige, where the altitude, between 600 and 900 metres, the cool climate and mineral-rich soils allow for the optimal development of aromas and of flavor, typical characteristics of the Isarco Valley wines such as Sylvaner, Müller Thurgau, Kerner, Gewürztraminer, Veltliner, whose grapes thrive on the sunny slopes around Novacella. The proprietary red grape varieties, however, are grown further south in the region and, precisely, Lagrein near Bolzano, Schiava Gentile, Pinot Noir and Moscato Rosa on the Corniano farm. Today the Abbey has 25 hectares of property, but produces grapes from around fifty hectares cultivated by the cooperative's members. The control of the grapes by the contributing members and the passion with which the Abbey has dedicated itself to the production of wines for centuries are synonymous with absolute quality, with labels faithful guardians of centuries-old traditions, never betrayed by innovative methodologies.

The Grüner Veltliner of Abbazia di Novacella comes from vineyards distributed in the Isarco Valley, precisely in the Bressanone basin, at an altitude of 650-750 meters above sea level. 75% of the fermentation takes place in stainless steel tanks, while 25% of the entire vinification takes place inside oak barrels. The aging period is a minimum of 6 months.

The Muller-Thurgau of the Novacella Abbey comes from the Muller Thurgau vineyards located in the Conca di Bressanone area at an altitude between 700 and 900 meters above sea level, with sunny exposures facing south, south-east and south -west. The vines have their roots in poor, draining morainic soils, rich in pebbles, gneiss and quartzite. Fermentation takes place in stainless steel tanks at a controlled temperature of 17-19 °C. The wine matures for 6 months in steel tanks before being bottled.
