Col d’Orcia is a traditional producer of Brunello di Montalcino. The choice of continuing to use Slavonian oak barrels was made many years ago, well before the debate between modernist and traditionalist producers began. Tradition means respect for the essence of Sangiovese di Montalcino which lies in the potential for aging, in the improvement of the wine through its long stay in wood and the consequent aging in the bottle. Even today, in Col d’Orcia, Brunello di Montalcino is aged for 3 full years in large oak barrels before bottling and is kept in the cellar 1 year before being released on the market.

Poggio al Vento Brunello Col d'Orcia is a very successful red, the grapes are harvested from vineyards at an altitude of 300 meters above sea level. implanted from 1974 onwards. The choice of the harvest time is based on the search for perfect maturity, aimed at producing a long-lived and important wine. Careful and rigorous selection of the bunches right from the vineyard, with manual harvesting and further sorting on the belt in the cellar. Fermentation takes place at a controlled temperature of 28 ° C in steel vats of 50 and 60 hl. Fermentations take place separately, in order to select the different areas of the vineyard in an optimal way. During the maceration, lasting 20-25 days, daily pumping over and long delestage are performed. The malolactic fermentation was carried out in concrete and the first racking was carried out directly in wood in the spring of 2014. Finally, the aging for 3 years in 25 and 75 hl Allier and Slavonian oak barrels. Bottling is followed by about 3 years of bottle aging in air-conditioned environments.
