Donna Olimpia 1898 was born from an intuition of Guido Folonari, who in the first months of 2001 decided to develop an ambitious oenological project. “When I decided to start this adventure alone, I really decided to take it and go. What was I looking for? I didn't know either. I was looking for a place that would excite me. I was lucky enough to find 3 ". Thus, in a short time, the three wineries built in the most prestigious production areas between Piedmont and Tuscany, emerge in the Italian scenario and with an area of ​​about 60 hectares all located in the Bolgheri Doc, cover a strip of territory of about 1.2 km; the morphology of the land is flat and cultivated for 45 hectares with vineyards and partly with arable land. From Cabernet Sauvignon to Cabernet Franc, but also Merlot, Syrah and Petit Verdot, while for whites Vermentino, Viognier and Petit Manseng. In addition to boasting a modern cellar of 5000 square meters, designed with a view to high energy savings and minimum environmental impact, to limit waste and harmful emissions in the territory, the Barricaia is certainly the most important and evocative environment of the entire wine estate, where almost entirely LED sources are used for the French oak barriques, with different illuminations depending on the needs and the hours of the day. A philosophy based on excellence that of Guido Folonari, on the quality of the product, the constant search for improvement, the typicality of a product linked to a clearly identifiable territory, but always with the awareness that the land has its needs, its times … And you have to know how to respect them.

Campo Alla Giostra Donna Olimpia 1898 is a very successful white wine. The grapes are grown on a sandy loamy soil formed in a continental, helical, colluvial environment, with a yield of about 70%, equivalent to 50hl of wine per hectare. The harvest takes place at full ripeness at the end of September to maximize the fruity potential of the grapes. The grapes, selected in the vineyard, are then taken to the cellar to be vinified. Alcoholic fermentation takes place in stainless steel vats at a controlled temperature, with the cap emerging with daily pumping over, and then continuing with the cap submerged so as to favor the extraction of color and aromas, prolonging the maceration for about twenty days. Malolactic fermentation takes place immediately after alcoholic fermentation. Aging is 18 months in French oak barrels (50% new, 50% one year) and 6 months in bottle.

Campo Alla Giostra Donna Olimpia 1898 has a very intense and lively ruby ​​color with evident violet reflections. Clean and broad on the nose with notes of blackberry, currant, light ripe pepper, cocoa and licorice. On the palate it is full, harmonious, warm and at the same time savory, with a persistent finish and light notes of red fruit jam.
