This white wine is obtained from Trebbiano and Pecorino grapes pressed in a soft way. The must, decanted and made clear at low temperature is fermented in small oak barrels of 225 and 550 liters where it remains for 12 months following the harvest, stopping and maturing on the noble fermentation lees.
The Oven of Abruzzo, so is called the small amphitheatre-shaped highland where in its middle the village of Ofena is located, in the National Park of Gran Sasso and Monti della Laga. It is a particular oven because it lies under the Calderone, the only glacier of the Appenines situated in the most southern part of our hemisphere, that is to say, an oven with refrigerator annexed.
