In the heart of the Piglio hills, an area of ​​excellence in the Cesanese area, in 2002 some friends decided to give substance to their passion and experience by founding the Pileum company. Time has proved them right, rewarding with a superior quality production the fruit of the thirteen hectares cultivated with Cesanese di Affile, the noble vine from which austere wines such as the Cesanese del Piglio DOCG Classico, Superiore and Superiore Riserva are produced. The territory with the gentle hills covered with vineyards, the heritage of a wine that popular tradition dates back to the times of Ancient Rome, the care and respect for the land, the recovery of native vines, valorisation of the culture of tradition and ancient teachings, use intelligent use of modern winemaking technologies: these are the strengths thanks to which the company has been able to gain an elite position in a very short time as a producer of the native Cesanese grape from Lazio.

Le Fattora from the Pileum estate is made from Fiano and Greco Bianco grapes, the vineyards are located on land with a good skeleton of limestone, 20% clay, 50% silt, 30% sand and are located at 450 m above sea level. The harvest begins in the second week of September and is carried out by hand, the vinification takes place with the grapes which are pressed with all the stems and vinified separately at 19C° with inoculation of selected yeasts for approximately 20 days and refinement for 4 months on the fine lees in 3 and 5 year old barriques.
