Sivi, Joško Gravner's Pinot Grigio produced in very few examples and in the best vintages is a complex wine with hints of honey, resin and wild herbs. The soft and ripe tannins make it a velvety and pleasant wine.

The vinification of Sivi Gravner is similar to that of Bianco Breg; the clusters are fermented with spontaneous yeasts in amphorae embedded in the ground. The must is left in contact on the skins and its yeasts for four to five months before being pressed to then pass again a period of maturation of about five months in the amphorae. This is followed by a period of aging in large barrels ranging from five to six years.
