In the past, farmers were very attentive to the influence of the planets and the phases of the moon. They always checked them before carrying out work in the countryside and in the cellar, to identify the most favorable moment to intervene. A fundamental aspect of Josko Gravner's productive life.

There are many ways in which man can be friends of the earth with him, but only one represents that of Josko Gravner, and his way of being in the world. A way that seeks a credible truth: that which starts from the earth and through its seasons, its transformations, and its inhabitants and its fruits and through the work of man generates that something more and better than the simple sum of its factors. A way that welcomes nature in all its manifestations and draws the best from it, even when the wind blows in the opposite direction: because in nature there is already everything you need.

Man's task is only to guide it, take care of it, even serve it, when the time comes. But above all to curb the urgency to intervene, modify, cut, build: sometimes nature needs time, silence, inertia. Then the man who wants to be a part, equal between the parts but with greater responsibilities, knows when the only action to take is to wait, to ensure that everything is accomplished in the cycle of life. In serenity, man faces the seasons and adversities, faces the passing of time which is good and right for the wine he awaits. In serenity, one can accept the last possible day for the harvest.

The vinification of Sivi Gravner is similar to that of Bianco Breg; the clusters are fermented with spontaneous yeasts in amphorae embedded in the ground. The must is left in contact on the skins and its yeasts for four to five months before being pressed to then pass again a period of maturation of about five months in the amphorae. This is followed by a period of aging in large barrels ranging from five to six years.
