The Crapolla agricultural company is located on a plain of lapilli sand between the sky and the sea of ​​Vico Equense. On the slopes of Mount Faito at 300 meters above sea level, the ground is made up of the material that comes from the disintegration of the limestone rock of the mountain and from the lapilli deriving from the noisy eruptions of Vesuvius. In 2008, 10,000 new vines were planted from the idea of ​​implementing modern viticulture. Although the company is small in size, it has created the complete supply chain. High quality wine making equipment was purchased and each stage of production was entrusted to professionals in the sector. The type of training is espalier with Guyot pruning. The density is very high with 8000 plants per hectare. The current vineyard area is 2 hectares. The grapes used are Falanghina and Fiano such as white, pinot noir and pre-existing marquee farms of Merlot and Sabato grapes. The characteristics of altitude, solar radiation, humidity of this plateau located between the sea, Vesuvius and Faito behind, means that the soil maintains freshness and humidity all year round with slow ripening processes, therefore grapes such as Falanghina and the Fiano ripen more slowly than the same grapes in Irpinia. The final product has important characteristics of acidity and therefore of freshness despite a difficulty in managing the healthiness of the grapes.

Sabato Abbazia di Crapolla grows on a sandy loam soil with the presence of pumice and lapilli at an altitude of 300m a.s.l. The vines, from 2007-2008, are exhibited in branches oriented east-west on different plains, for a total of 8000 plants per hectare, with a grape yield of 50 quintals per hectare. The grapes, grown with espalier training with double guyot pruning, are harvested in the first ten days of October. The low temperature fermentation in stainless steel tanks precedes the relaying of the wine in tanks for 4-5 months

Sabato Abbazia di Crapolla has a dense and hardly penetrable ruby ​​color. The nose yields over time to more complex aromas. On the palate it is rich but maintains the freshness and noble tannins of the grape.
