The winery is located in the Valdobbiadene territory between the Alps and Venice. The Umberto Bortolotti Winery is mentioned among the best producers of Valdobbiadene prosecco for the elegance of the wines and for knowing how to enhance the Glera grape. I Viniloqui della Cantina Bortolotti is a Brut Quality Sparkling Wine that goes beyond simple tasting, offering a real dialogue with time. This extraordinary 2005 vintage is produced entirely from Chardonnay grapes, sourced from vineyards located in two areas of Trentino: 85% from Villazzano (TN) at 300 m above sea level and 15% from Cognola (TN) at 600 m above sea level. The Pergola Trentina Semplice training system, with an average yield of 80 quintals per hectare, ensures a raw material of excellent quality. The harvest, carried out in the last week of August 2005, gave birth to only 2005 750ml bottles, evidence of a limited and precious edition. The secondary fermentation took place with a slow fermentation in a stainless steel autoclave from 16/05/2006, lasting approximately 8 months at 13°C, with the only addition of cane sugar and selected yeast. The real magic of this sparkling wine, however, lies in the refinement in the bottle, which began on 02/14/2007 and continued for an impressive duration of approximately 218 months (almost 18 years!) before being released on the market. "I Viniloqui" is not just a name, but an invitation to "let it express itself in its breadth, envelop it and then direct it, without dispersing it". An experience that involves the senses with its warm, complex and unexpected expressions, which tell the charm of a maturity where the past becomes history and the cultural heritage of the bunch expresses its unexpected richness.
It has an intense, brilliant golden yellow color, testimony to its long evolution. The perlage is very fine, persistent and gives a delicate and constant crown. On the nose it is a deep and layered sensory experience. The charm of maturity is expressed in complex notes of toasted dried fruit (hazelnut, almond), honey, panettone, melted butter and bread crust, fused with hints of ripe and candied yellow fruit. A subtle minerality is perceived and, with oxygenation, tertiary nuances of great elegance emerge. In the mouth it is an enveloping and unique sensation. The effervescence is soft and creamy, perfectly integrated into the structure. The sip is warm, complex and deep, with a masterly balance between the aromatic richness (dried fruit, honey, toasted notes) and a pleasant, yet discreet, acidity that refreshes the palate and prolongs its persistence. A wine that expresses unexpected richness and plurality, inviting contemplative conversation. Its complexity and depth make it ideal to be enjoyed alone, in a moment of contemplation and private conversation, to appreciate every nuance without distractions. It pairs beautifully with goose liver pâté, delicate terrines, or gourmet finger food made with fine ingredients that do not cover its richness. Its aromatic complexity and evolved notes can harmonize beautifully with dishes that use white or black truffle, such as risotto or tagliolini. Excellent with long-aged hard cheeses, where its structure and complexity create a balanced dialogue with the savory and intense notes of the cheese. It can accompany white meats such as capon or guinea fowl, prepared with complex but not too invasive sauces. Surprisingly, it can find an interesting pairing with desserts based on dried fruit or not excessively sugary desserts, where its acidity balances the sweetness.
