The Highland Park distillery is the most northerly distillery in Scotland in Kirkwall in the Orkney Islands linked to the legendary figure of Magnus Eunson, a Protestant pastor by day and night whiskey distiller, who founded it in 1798 respecting the ancestral Viking traditions. Even today in this renowned distillery, considered by many to be the most traditional of all Scotland, the malting of barley is done by hand and the barrels are kept in stone warehouses, wet and fresh, as it was 200 years ago. The peat of the Orkney Islands used for the drying of malt, gives that sweet floral fragrance typical of peat artisan Highland Park whisky and its "terroir".

Adelphi's Fascadale Highland distilled by Highland Park and bottled by Adelphi, is a Single Malt in which the heath moisture can be recognized on the palate, seasoned with smoky notes and a long and syrupy finish.
