Caol Ila Distillers Edition

The Scottish distillery Caol Ila is located on the island of Islay, founded in 1846 by Hector Henderson, produces among the best Single Malts in the world. It takes its name from the strait on which it overlooks, which separates the island of Islay from the island of Jura and represents one of the most suggestive areas of Scotland, called in English "Sound of Islay" and in Gaelic "Caol Ila". In 1974 the company undergoes a major renovation and becomes the largest distillery on the island, while jealously preserving the old traditional methods skilfully handed down by workers and peat cutters. The malting of the barley takes place locally in Port Ellen, to then be distilled with the stills faithfully reconstructed from those of the nineteenth-century originals. The water used in the production process is the pure water of a stream flowing from the rocks of nearby Loch nam Ban, while all the phases are skilfully directed by Bill Stitchel, following step by step all the steps as his father, his grandfather and his father did before great grandfather. These are the reasons that make Caol Ila Scotch whisky one of the best single malts ever with total respect for ancient traditions.

This single malt Caol Ila Distillers Edition undergoes a double fermentation, first in American barrels and then in Spanish barrels of Muscatel fortified wine. The wood feels but is not intrusive, while the scents of fruit and the spicy notes of cinnamon give a sweetness to the palate overwhelmed just afterwards by peat smoke. Dry, balanced and refined, it's an excellent single malt to be dulled on the right occasions.
