The must undergoes two débourbage (decantations), one in the press immediately after pressing and the second, a débourbage à froid, in stainless steel tanks at 6 ° C for a period of 24 hours. The Brut Vintage 2015 Pol Roger champagne is made with the house's traditional vintage blend of 60% Pinot Noir and 40% Chardonnay from 20 Grands crus and Premiers crus in the Montagne de Reims and Côte des Blancs. Produced only in limited quantities, the Brut Vintage 2015 matures slowly in the deep cellars of the Maison. Fermentation takes place at a controlled temperature, taking care to keep the various particles separate until the malolactic fermentation has taken place, then the cuvèe where the Vintage Pol roger champagne takes shape.

On the nose subtle hints of rose petal notes: on the palate expressive and full of freshness, the scent recalls pastry, dry pastries and dried fruit, and then evolves into aromas of honey and apple jelly.
