The San Salvatore 1988 farm was born in a unique terroir in the heart of the Cilento National Park where hills and small mountains come close to the sea. A soil rich in minerals and an ideal exposure for a healthy ripening of the grapes. An agriculture where the interaction of man only serves to support what nature had established. Manual harvest in small plastic crates. The grapes are softly pressed, de-stemmed and brought to 4 ° C and cryomacerated for 6 hours. After fermentation in steel vats at a very low temperature, it is refined for 6 months on its own fine lees.
