Ventinove

Sant'Eufemia is a farm located in the territory of Cisterna di Latina, between the areas of Doganella di Ninfa, Colle della Villa and Valle Abate, on the border with Lanuvio and Velletri. A wonderful landscape where organic farming is practiced with passion and dedication in the cultivation of olives, kiwis and grapes. Among the cultivated varieties we find Bellone, Grechetto, Merlot, Malvasia Puntinata, Vermentino, Syrah, Cabernet franc and Cabernet Sauvignon used to produce very good wines.

Ventinove is a white obtained from grapes of the Malvasia Puntinata variety grown in the vineyards between Cisterna di Latina and Velletri in the area called Valle Abate on volcanic soils mixed with sand and clay, hence the sapid taste that distinguishes it. Alcoholic fermentation takes place at a controlled temperature for about two weeks, after which the wine is refined on the fine lees for a few weeks, and then bottled in the first months of the year following the harvest. A young wine with good structure.
