Nèprica Negroamaro

The great tradition of the Antinori family from Tuscany arrives in Puglia at the end of the 1990s in that territory of the Murgia and the northern Salento where wine has been produced since Roman times, took over the Tormaresca winery and founded the new winery of Masseria Maime, conceived according to the most modern theories on the vinification of Renzo Cotarella. In this wonderful context made of fields and olive trees, where the largest quantities of wine grapes have always been produced since ancient times, it started an hard work of valorisation of native vines such as Primitivo, Negroamaro and Aglianico begins, guided by the rediscovery of the "terroir" kept for centuries.

The name Calafuria is inspired by the many coves in Puglia where the tradition of the rosé obtained from Negroamaro is deeply felt, considering the quality that the grape variety expresses in proximity to the sea. The grapes are selected by hand, de-stemmed and softly pressed. The must obtained is contained in stainless steel tanks at a temperature of 10 ° C, in order to have a natural settling. Subsequently the alcoholic fermentation takes place at low temperatures (16 ° C) to keep the original aromas intact. Following a short period of aging in steel to which are added 4 months of aging in bottle.
