Since 1798 this Maison has been named after its founder. From the very beginning the trade was prosperous, thanks to the quality of elaborate wines. Champagne Jacquesson was the favorite of Napoleon, and in 1810 the Emperor after his visit gave the highest recognition of the era for a commercial enterprise, a gold medal for "Beauté et la Richesse de ses Caves ". Today, Maison Jacquesson & Fils is proud to follow the traces of its glorious founders and concentrates its efforts on annual production of about 350,000 bottles, with non-industrial processing methods, dedicated to the highest quality standards. This old but small Dizy mansion, at Aÿ's door, under the wise and ambitious guide of the Chiquet brothers, is undoubtedly one of the great realities of the Champagne region. Despite its success, production has never been inflated, and grape supply comes essentially from 28 hectares of vineyards, of which 11 are located in the Cote de Blancs, at Avize. Strict winemaking, followed by optimal aging, induces the millennium cuvée to market on the basis of their maturity instead of chronologically. A very low dosage (all millesimates are processed as extra-brut) preserves the fineness and purity of wine.

The assembly of wines of the same harvest, coming from dozens of parcels, is completed with some of their predecessors: the "vins de réserve", which have been preserved in the cellar for several years. In this process it becomes crucial to capture the best of each vintage, avoiding denying the variations of each crop. We count our "Cuvées" to date them and to highlight the different personalities. Vintage 2012: Grapes harvested in Aÿ, Dizy, Hautvillers Avize and Oiry. The winter was cold and long, the spring and the beginning of the summer very rainy with consequent mold attacks. The season finale, however, was magnificent, with harvests of limited yields and remarkable quality. 195,836 bottles produced, 7.696 magnum and 250 jéroboam. The Cuvée 700 is the only assembly that the cellar produces with the aim of searching for a vintage and consequently obtaining a different profile every year, which is identified by a number of cuvée. The concept of the Cuvée 700 is unique in Champagnee stands opposite the brut sans année! It seeks excellence rather than regularity, respect for the character of the thousandth rather than its negation and the proposal of a great wine rather than the maintenance of a style. The contribution of vins de réserve is done in order to increase complexity without losing the character of the base vintage. It is for all these reasons that it seemed unnecessary for the cellar to produce a possible cuvée millesimata that would have nothing but to impoverish the Cuvée 700. The Cuvée 700 is an assembly of more vintages and can not therefore be identified with the mention of only one Them: choosing a number has become indispensable and rather than inventing one at random we preferred to use the production number that Cuvée brings to the cellar bottling books. La Cuvée n ° 1 was created by Maison in 1898 to celebrate its first centenary. And it is from Cuvée No. 728, drawn up by the 2000 collection, which started the adventure of Jean-Hervé & Laurant Chiquet. The Cuvée comes from the three Grands Crus and the two Premiers Crus, it is only made using the first presses, it is vinified in wood, almost always without filtration, so it is first of all a Grand Champ de Champs. It certainly has a remarkable aging potential and that is why we propose it with two different refinements. During the first years, the second wine fermentation of the Vins de Champagne allows them to develop effervescent but also slowly maturing on yeasts: it is the Cuvée 700, refined for four years. If you decide to continue staying over the yeast over the first three or four years, the formation of the tertiary aromas is combined with the freshness preserved due to aging in a poorly oxidative environment: the Cuvée 700 Dégorgement Tardif where the aging is prolonged To nine years.

The late harvest of aged wines for more than 15 years allows extreme results: the extension of the ripening phase to the yeasts before the broth produces tertiary flavors that combine harmoniously with freshness preserved due to aging in a low oxidative environment. This combination produces unforgettable feelings. Jacquesson allows us to taste today, going back to the wine shop of the Maison, millennial wines become legendary. This cuvée, bearing the number 735, is drawn up since the year 2007, And follows the cuvée n ° 734 based on the 2006 vintage. The meteorological trend of 2007 was very peculiar: A very mild winter (the mildest since 1960, much like 1990) followed by a spring with a near summer temperature (the hottest 30 years apart from 1997). These two seasons have been more rainy and this has caused a vigor of vine. Everything changes in the summer, the coldest of the last 10 years and with the slightest insolation of the last 30. These difficult conditions favored the development of mildew and, in particular, of botrytic attacks, started since July. But in these conditions, the rigorous cultivation practices adopted by Jacquesson have produced the best results: the vineyard inertia played its full role as a competitor of the superficial roots of the vines, moderating considerably the vigor and slowing the acne widening. Fortunately, August 25 began stable weather conditions. Which caused a stop of botrytic attacks and allowed the conclusion of ripening in good condition. This contrasting meteorological situation is found in tasting. Of the "vins clairs". Chardonnays are fine, complex and mineral; The Pinots Noirs a bit more heterogeneous, the best show the power and maturity that they expect from them; The Pinocchi Meuniers are fairly fruity but with less body than the one hoped for. The wines were vinified in large oak barrels and refined on the yeasts with regular bâtonnage. The bottling, carried out without any filtration, gave rise to 332,600 bottles, 14,470 magnums and 416 jøroboams. The assembly consists of 47% Chardonnay, 33% Pinot Noir and 20% Pinot Meunier. The 2007 vintage wines (72%) were "completed" with "vins de réserve" 2006 (22%) and 2005 (6%).
