The Maison Durdon Boubal has been leading its own vineyards for several generations, the production of Champagne derives mainly from vineyards of Chardonnay, Pinot Noir, and Pinot Meunier. The vineyards rest on hills facing south-south-east, this position allows them the greatest possible amount of lighting throughout the day, but this is not the only fundamental aspect for the production of this champagne, since also the land on which the vineyards rest plays a fundamental role thanks to the mineralogical properties present in the subsoil. Since 2009 Ludovic and his wife Sandie have started the conversion of all their 3 hectares to organic cultivation, in order to respect the ecosystem of their vineyards as much as possible. Today all their vineyards are certified organic and their cuvées are progressively becoming organic certified.
Extra-Brut Millésime Durdon Bouval is harvested from a clay-limestone soil from vines aged 30 to 50 years, undergoes slow fermentation in thermo-regulated steel containers and then stored for at least 36 months.
Extra-Brut Millésime Durdon Bouval is a champagne that releases an obvious complexity, where all the nuances parade past the taste buds, followed by a parade of ripe fruit. Discrete bubbles, with notes of dried fruit and candied citrus. The nose evokes the delicacy of butter combined with mandarin peel, fresh pears and a hint of toast. The freshness continues in the mouth and the finish is accompanied by an enchanting sapidity.
