Mariotti wines are also called wines of the sands, and Giorgio the progenitor in 1976 gives life to this story that focuses on some varieties, such as the Fortana grape and the Uva d'Oro, which have the prerogative to adapt perfectly to sandy soils like those in the Ferrara area a few kilometers from the Adriatic coast. Giorgio's activity is today carried on by his sons Mirco and Barbara, who have even more carefully preserved the peculiarities and winemaking traditions of the area, protecting and enhancing these centenary strains that we can consider real open-air museums.
This Stella Maris Brut sparkling wine by Mariotti is produced with Fortana grapes grown in the protected area of Duna della Puiiaa San Giuseppe di Comacchio. The vinification takes place in stainless steel, refines in the bottle for a year in contact with the yeasts, in addition to the particularity of refining in water in a basket called "Ostriga" used for the breeding of oysters.
