Palinuro is an organic wine produced by the San Salvatore 1988 farm, dedicated to the myths of the city in the heart of Cilento told in Virgil's Aeneid. A white with a straw yellow color with greenish reflections and a fragrant bouquet of apple, pear, plum and floral and herbaceous scents. Fresh and balanced on the palate, it has a pleasant minerality that enhances its drinking.
The San Salvatore 1988 farm begins its history at the foot of Vesuvius in the 1940s in Boscoreale, mirroring those ancient values in today's organic and biodynamic production in the Cilento National Park, between Stio, Paestum and Giungano. Vineyards that tell of a special terroir, cultivated with passion and respect for nature and traditions, never intensive. The cellar reflects the modern and innovative approach, being powered by a 96Kw photo-plant. A well-structured company that has 97 hectares, of which 21.5 are planted with vines, and the rest among olive groves, woods and orchards, as well as a breeding of 450 buffaloes, where a genuine wine is produced, animated by the love of land.
Vetere is a rosé whose Aglianico grapes are carefully selected by hand to obtain optimal vinification. The pressing is ultra soft, and the maceration takes place at low temperature for 6 hours. Subsequently the wine ages for at least 6 months in steel, and the result is delicate as intensely mineral.
