Il Sigillo Cantine del Notaio is a powerful and elegant pure Aglianico with a marked softness on the palate.
Cantine del Notaio was founded in 1988 in the heart of the Vulture by Gerardo Giuratrabocchetti, passionate about viticulture and thanks to the experience gained in the academic agricultural world, he decides to enhance Aglianico by carrying out studies on the potential of
this extraordinary vine with the help of Professor Luigi Moio. Great is the attention and respect for the vines using organic and biodynamic farming methods to preserve what the fruit can give to the wine. The winery located in Rionero in Vulture is a combination of innovation and tradition with the perfect aging caves for the aging of wine in barrels and barriques thanks to a unique microclimate for humidity and ventilation.
The harvest is manual in boxes in the last ten days of November / first week of December when the fruit is over-ripening or withering due to the cold. It is a modern interpretation of a style of Aglianico produced in the past in the area and which recalls a sort of Amarone produced with only Aglianico grapes. The maceration lasts about 30 days being able to extract as much as possible having a complete and abundant ripening of the tannins. Aging: in natural volcanic tuff caves, in French oak barrels or barrels, for a period of at least 24 months and another 12 in the bottle.
Aglianico Il Sigillo Cantine del Notaio is a wine of great structure, but at the same time elegant of a garnet red, bright, impenetrable with hints of wild berries in jam, chocolate and spices. On the palate opulent and at the same time elegant, the taste has a soft entrance due to the slight residual sugar. It is velvety and characterized by a long spicy finish, of liquorice and dark chocolate.
