Zacapa is the best known name of the Licorera Zacapanenca distillery, which was born in the heart of the city of Zacapa, in Guatemala. The Zacapa distillery was famous all over the world for the excellent quality of its aged rums. It was born in 1940 thanks to the commitment of three local families, Girón, Estrada and Gordillo, who immediately availed themselves of the advice of Dr Burgaleta, well-known Spanish rum expert. Years of careful experimentation have led to the birth of the Ron Zacapa Centenario, produced on the occasion of the centenary of the city of Zacapa, in 1976. Zacapa rums are distinguished from industrial rums by their particular production method which, instead of molasses from cane sugar, use only pure cane juice, or 'miel virgen'. After fermentation and distillation, Zacapa rum is brought to heights exposed to 2300 meters, where it rests in white oak barrels. It is here, in the 'House in the Clouds', that the aging process takes place according to the particular Solera System: the barrels placed one above the other, are filled starting from the ones above; each year the aged rum is decanted into the lower ones, and the emptied ones are refilled. Like a magical ritual, the different phases alternate until the blend of aged rum reaches the maximum gustatory expression. This is how the precious Zacapa rums are born, among the best in the world: the first quality of the ingredients used and the slow and wise aging method give the rums their enchanting sensorial notes.

Ediciòn Negra is an extraordinary rum created by the master of the blend Lorena Vasquez, who is responsible for the selection and assembly of rums aged between 6 and 24 years, which once assembled age another 2 years in the aromatic garden of the splendid Zacapa estate. This particular aging process immersed in aromas of more than 20 herbs including fennel, coriander and tarragon on the Guatemala mountains at 2300 meters above sea level, together with the use of more roasted woods, gives this rum a rich taste completely different from the other labels. A perfect blend that requires patience but repays all the sacrifices at the first sip.
