The unmistakable hallmark of Fiasconaro baked goods is natural leavening, an extremely slow fermentation process that lasts a full 36 hours. Natural leavening begins in the "mother," a nucleus of fermented dough to which water and flour are gradually added. It's a process that has always been renewed, always maintaining the same rhythm and consistency. Its success requires skill, attention, and, above all, the avoidance of chemical additives and preservatives, while still guaranteeing the product a surprisingly long shelf life. Dough leavened through this completely natural process offers unique and unparalleled quality characteristics, in terms of lightness and fragrance.
