Cori is an ancient town surrounded by a wonderful hilly landscape made up of olive groves and vineyards as far as the eye can see. The traces of Roman and medieval times are evident, from the remains of the Temple of Hercules and Castor and Pollux in the Acropolis, to the alleys of the historic center. Here is the Cincinnato Agricultural Cooperative between the Lepini Mountains and the Castelli Romani, born in 1947 by a few dozen farmers with the idea of ​​bringing together forces and resources to market the local wine. Today it has 152 members on a total vineyard area of ​​450 hectares, and has won international awards that have brought it from most of the world from Lazio. The vines grown are the autochthonous Nero Buono from the Cori area, the Bellone already present in Roman times in the area of ​​the the Castelli Romani, the Cesanese, the Greco and the Malavasia Puntinata. A story that of Cincinnato made of sharing and dedication to the land, where sustainable agriculture is practiced with some completely organic vineyards.

Classic method – made only with Bellone grapes from an ancient native variety cultivated since ancient times on the lava hillsides of the Cori district. Produced under the traditional classic method which uses second fermentation in bottle, matured on the lees for about 18 months.

It has an intense straw yellow color; fine and persistent perlage; intense and fragrant perfume, with delicate fruity sensations to which are added the aromas deriving from the lysis of the yeast that recall the bread crust and the biscuit. With a savory, fresh and elegant taste, with a well-balanced sweetness.
