Since 1848, the Tiefenbrunner Castel Turmhof estate in Niclara has been one of the oldest in South Tyrol, guarantors of quality and refinement, skilfully crafting the art of winemaking in a perfect balance between tradition and innovation, in constant evolution but always faithful to themselves. “We produce very proud wines that know where they come from and that survive passing fashions thanks to their uniqueness” - Christof Tiefenbrunner. The wines, endowed with a unique and highly recognizable personality, are the result of a long maturation over time, traced by the history and origins of the winery, with processing techniques that are based on reason and measure, starting with the limited cultivation land and strongly linked to quality, to arrive at an extremely ecological philosophy of approach to plants and specific winemaking processes according to their varieties, for optimal development. Sabine and Christof are committed to continuing to write the history of Tiefenbrunner by defining the art of wine as a precious component of their family's identity, of which it is their responsibility to take care of it and carry it forward with respect, day after day. With an estate of about 25 hectares of land between 250 and 1000 meters above sea level, the Tiefenbrunner winery carefully treats and works the resources that nature offers it with a perfect knowledge of the distinctive features, giving each variety the soil in which it can grow. to the best. The splendid mild climate and the slightly clayey soils with a high limestone content constitute a perfect geoclimatic basis for the development of their vineyards. Honest wines, without frills or exaggerations: this is what the Tiefenbrunner winery believes in.

The Chardonnay Merus produced by the Tiefenbrunner winery is grown in two different areas, in the hilly area of ​​Cortaccia, on limestone soils located approximately 400 meters above sea level and in the alluvial plain of Magré, made up of pebbles and sand. A dual origin of the grapes, which allows for a refined freshness, together with a rich and ripe fruit. The fermentation process takes place in steel, at a controlled temperature of 20°C, while the subsequent aging on the yeasts takes place in concrete for a period of approximately four months.
