Vintage Collection Dosage Zéro noir

The Vintage Collection Dosage Zéro Noir is the result of a careful selection of Pinot Nero grapes, first in the vineyard and then in the cellar, and by a skilful vinification conducted in full respect of our know-how. The grapes, freshly harvested by hand in small boxes, are traced for the original vineyard and cooled. Each bunch is selected by expert eyes and hands. The grape has a colorless pulp but the black skin: in order to create the base of Dosage Zero Noir it is essential that the juice, the extracted must remain white or lightly pinked. This is why the pressing takes place strictly at low pressure, so that the skin remains intact and does not yield color. The must obtained in this way ferment in small oak barrels.
