Illirio

Cori is an ancient town set in olive groves and vineyards, about 50 km south of Rome. As with many other towns and cities, its history often overlaps with myth. It is said that its origins date back to the first millennium BCE, when the Trojan Dardanus, escaping with Aeneas after the destruction of Troy, founded Cori and named it Corace D’Argo. In the cellar, the grapes are selected and pressed, after removing the stalk. The must is cooled down to 8 °C, to allow natural settling. The selected yeasts are then added to steel tanks provided with cooling jackets which allow the must to ferment for 8 days at 18 °C. The fermentation brings about the perfume and fruity aroma of the grapes. After racking, the wine is allowed to mature for about 3 months to acquire harmony and complexity. Finally, it is stored in stainless steel vats and bottled in January.
