Korì

Cori is an ancient town surrounded by a wonderful hilly landscape made up of olive groves and vineyards as far as the eye can see. The traces of Roman and medieval times are evident, from the remains of the Temple of Hercules and Castor and Pollux in the Acropolis, to the alleys of the historic center. Here is the Cincinnato Agricultural Cooperative between the Lepini Mountains and the Castelli Romani, born in 1947 by a few dozen farmers with the idea of ​​bringing together forces and resources to market the local wine. Today it has 152 members on a total vineyard area of ​​450 hectares, and has won international awards that have brought it from most of the world from Lazio. The vines grown are the autochthonous Nero Buono from the Cori area, the Bellone already present in Roman times in the area of ​​the the Castelli Romani, the Cesanese, the Greco and the Malavasia Puntinata. A story that of Cincinnato made of sharing and dedication to the land, where sustainable agriculture is practiced with some completely organic vineyards.

The Bellone grapes that give life to Korì are grown on the volcanic hills of Cori at 250 meters above sea level, on soils with a predominantly clayey composition. The harvest is manual during which the best grapes are selected for a "cremant" pressing process, from which only free-run must is obtained with a yield equal to 50%. Fermentation takes place in steel tanks at a controlled temperature of 15 ° C, and then refermenting in the bottle according to the classic method and aging on the lees for at least 24 months. A zero dosage sparkling wine, without the addition of sugars, which wants to express all the character of Bellone in purity, and the personality of the terroir of origin.
